Vietnamese cooking : all phôs are green

In the kitchens of FraPhagocytosis by the Thai, Chinese and Japanese cuisines, Vietnamese cuisine has long been the great forgotten of Asian gastronomy, but is finally affirming among its neighbors. Proof of its wealth, the Michelin guide has just published its first book 100% Vietnamese. Four chefs were awarded a star. Some dishes are now essential in France: the traditional soup Phô, or the sandwich Bahn-Mi and, of course, the nems that were born not far from Hanoi, around 1740. These renowned dishes are only a small part of a complex and fascinating gastronomy, linked to the country’s history and geography.
